I'm about to put some "17s on my corsa and wondering if I can fit with no problem a 320mm brake disc.
And would it be necessary to change the caliper as well?

Yes, if you buy bigger discs you need the caliper for
Fit over the bigger discs.

17's on a corsa sounds awful

i think it will look cool as the car has been lowered by the previous owner.
