Had my car in for mot, it failed on emissions so I put a second hand working sensor in but it didn't help so put a new sensor in and it still failed, the tester showed me his diagnostic and told me that the reading should hit a certain figure and stay there but both the figures were going up and down and the emissions were 0.200 over and wouldnt come down so tomorrow they are going to try a Bosch sensor but is there any other things it could be, cheers

Many aftermarket replacement cats only get through one MOT and then fail. The variation you describe makes me think it is the cat that's the issue.

But otherwise check the usual - all service items, especially filters. I assume the MOT guy checked there were no leaks and got it red hot before testing.

In which case some Forte fuel treatment, or some Cataclean, and an Italian tune up might just help. But if it's the cat that's gone then you may end up having to replace it again.
