Just make sure you've circulated the water properly first.
Squeeze the coolant pipes with the expansion tank cap off, and check for leaks from the radiator or pipes. Run the engine and squeeze the pipes again, that'll help any air come out of the system. After about 15 minutes the coolant should be properly bled through the system.
You get creamy oil when water comes into contact with it. I would drive the car for a day or two and check it again. If you've lost water and find excessive cream inside the engine, there's a good chance it's gasket related. You'll also notice a drop in power when it's really bad, as you lose compression from the engine.
